Every sake begins with a starter (shubo) that grows healthy yeast. In the kimoto (生酛) method, brewers ram the mash with poles (yama-oroshi) and let lactic acid bacteria from the brewery itself protect the starter. It takes about a month, versus two weeks for the modern method of adding lactic acid.
The payoff is sake with firm acidity, savory depth and a long finish — often excellent warm.
