Most sake is released within a year. Koshu (古酒) or jukusei-shu is aged for three years or more — there is no legal definition, but that's the common industry yardstick. It turns gold to deep amber and tastes of honey, nuts, mushrooms and spice.
How to drink it: room temperature or slightly warm, in small pours. Pairs with blue cheese, chocolate and rich braises.
