Sparkling sake gets its bubbles in one of three ways: a second fermentation in the bottle (like Champagne), bottling before fermentation has finished, or added carbon dioxide. Bottle-fermented versions are often cloudy and dry; carbonated ones are usually sweeter and lower in alcohol.
How to drink it: well chilled in a flute or wine glass, as an aperitif or toast.
