Omachi (雄町) was discovered in Okayama in 1859 and is the only major sake rice that was never crossbred. Many modern varieties, including Yamada Nishiki, have it in their family tree. It is tall and hard to grow, so production nearly disappeared before Okayama farmers revived it. Fans call themselves “Omachists”.
In the glass: rich, rounded and earthy with deep umami and a broad, lingering finish. It develops beautifully with a little age.
