Aiyama (愛山) was bred in Hyogo and is grown in very small quantities, which makes it one of the most sought-after sake rices. Its grains have an especially large shinpaku and dissolve readily.
In the glass: sweet, rich and juicy, with lots of fruit — often called a “rice for sweet-tooths”.
