Gohyakumangoku (五百万石) was registered in 1957 in Niigata and named to celebrate the prefecture's rice harvest passing five million koku. It ripens early and suits cold northern climates, and for decades it was the most-planted sake rice in Japan.
In the glass: light, crisp and clean, with a dry, refreshing finish. It's hard to polish below about 50%, so it shines in junmai and ginjo grades.
