Ginjo (吟醸) uses the same 60% polishing rule as junmai ginjo and allows a small amount of brewer's alcohol. Expect a lighter, drier body than junmai ginjo with a bright, fruity nose.
On US shelves plain ginjo is less common than junmai ginjo, and it is often a little cheaper for the same level of aroma.
How to drink it: chilled, 8–12°C.
