Junmai ginjo (純米吟醸) is made from rice, koji and water only, with each grain polished to 60% or less and fermented cool and slow. It sits in the sweet spot many drinkers love: clear fruit aroma, and still enough rice flavor to stand up to food.
It is also where many of the most popular modern labels live, and where you'll find the best value among aromatic sake.
How to drink it: chilled to cool, 10–15°C. Works with sushi, salads, white fish, chicken and lightly sauced dishes.
